French winemakers have always seen Sauvignon Blanc as an ideal wine to accompany food as it is extremely versatile wine however it is not particularly known for its ageing qualities. It is more commonly aged in stainless steel rather than wood as the oak flavours can become overpowering.
Tolerant of hot climates, this grape grows well in Bordeaux and the Loire regions in the Old World. Sauvignon Blanc was first grown in North America in 1878 when cuttings from the renowned Chateau d'Yquem were given to two American wine growers. Today, wine growers from California to New York produce Sauvignon Blanc. Its popularity was helped greatly in the late 1960s with the introduction of the synonym Fume Blanc. Even today, wines sold under the Fume Blanc label still outsell wines labelled Sauvignon Blanc.
A Sauvignon Blanc or a Fume Blanc is easily identifiable by its consistently pronounced smoky, herbaceous qualities. They can be light and dry or full and sweet.
