If you intend to cellar the wine yourself, it should be kept in a cool, dark place with an ideal temperature of about 10° C (it must be frost free). Humidity plays an important role as it keeps the seal of the corks and the wine in top condition. By keeping white wine in the fridge for weeks at a time, you can actually deaden the flavour when you come to drink it. Table wine should always be stored on its side to ensure that the corks don't dry out. A layer of carbon dioxide in the neck of champagne and sparkling wine bottles protects the wine from contact with the air and they can be stored upright. Fine wines should always be kept in their original wooden cases, particularly if you want to sell at auction at a later date.

The merchant will usually work closely with a cellaring service. The cellarer will set up an account for you, mark up cases of wine as your property and will store the wine in the correct state, thus allowing the best possible maturing conditions to produce an outstanding wine and an excellent selling price. The cellarer will have bonded facilities and therefore if the wine is purchased in bond it can stay this way. This means that there is no duty or VAT to pay by either you or any prospective purchaser. These will only become payable once the wine is cleared for delivery and out of the bonded facility.
